INGREDIENTS:

Vegetable Oil
3 Large Aubergines, Cut into
Half-moons
100gms (1/2 jar) Harissa
4 Tbsp Clear Honey
1 Tbsp Sea Salt
TO GARNISH
2 Tsp Sesame Seed, Lightly
Dry-toasted
1 Tsp Nigelle Seeds
1 Tsp Coriander Seeds
4 Spring Onions, Thinly Sliced From
Root To Tip

Method:

  • Heat a large pan with aprox 1cm of oil. Add the aubergines, they will absorb the oil, fry for 10-15 (until soft), add more oil as required.
  • They will shrink and golden on each side, toss every few minutes. Once cooked transfer onto a kitchen paper to absorb the
    excess oil. Wipe any excess oil from the pan.
  • Transfer the augberines back in with CAARA harissa, honey and seasoning to taste. Coat the aubergine evenly.
  • Serve with sesame seeds, nigella seeds, coriander seeds & spring onions.

Caara Tip:

Soak cut Aubergine in ice cold salted water for flavour boost.
