This is the traditional pasta that is cooked in most homes in Puglia, Italy. It resembles a shape that like a disk, with an edge just thicker than the inner part and a wrinkled texture perfect to capture the delicious sauce. Often referred to the "Ear" shaped pasta, the ideal cooking time for this is 11 minutes. Be sure to salt your water before boiling the pasta and take it off the heat just in time for it to be al dente.
