Sun-dried Tomato Pesto (Travels)

Ingredients: Basil, olive oil, garlic, aged parmesan, pine nut, sun-dried tomato, balsamic vinegar, salt, pepper
Try it: spread on a sandwich, stuffed in chicken or add a dash of cream and stir through pasta!
There is a romance about drying ripe tomatoes in the sun to preserve them. The flavor intensifies into a malty rich taste. The Aztecs began salting and sun drying their tomatoes in order to preserve their freshness around the year 700 AD. We love them made in to a versatile pesto sauce.
